Birria Goat Tacos

Ingredients

1kg Few & Far Bone-in Goat
2 thinly sliced onions
2 gloves garlic thinly sliced
2 ripe tomatoes sliced
2-3 Ancho chillis
2-3 cascabel chillis
2 tablespoons tomato paste
2 tablespoons ghee, or oil
Smoked paprika
1 ½ cups Lamb stock
Tortillas
1 cup grated cheese
1 tablespoon of finely chopped fresh coriander

Method

  1. Pat dry goat. Heat ghee in pan and brown off goat meat. Set aside.
  2. Add onion and garlic, stir gently until softened.
  3. Add paprika and season with salt.
  4. Add tomato paste and tomatoes and cook for 2 minutes.
  5. Add chillies and stock and return goat to pot. Bring to a simmer.
  6. Place lid on and simmer for 2 hours. Or place in the oven at 160C for 2-3 hours
  7. Remove from heat.
  8. Remove goat from sauce and strain. Blitz veggies into a paste and return to sauce, (set aside some paste for next step).
  9. Remove goat meat from bone and add birria paste and sauce.
  10. Toast taco in fry pan. While in the pan, add goat meat, grated cheese until melted
  11. Add coriander and diced onion to birria sauce for dipping
