Jamaican Goat Stew

Ingredients

1kg Few & Far Bone-in Goat
1 large onion, chopped
1 spring onion, chopped, extra to garnish
2 cloves garlic, chopped
1 knob ginger
2 green chillies, seeds removed
2 Habanero chillis, seeds removed
3 sprigs thyme
Half bunch coriander, extra to garnish
Half bunch parsley
Sea salt flakes
1 tablespoon Extra virgin olive oil
Juice of 1 lime
1 tablespoon Worcestershire sauce
1 tablespoon tomato sauce
2 tablespoons brown sugar
Steamed rice

Method

  1. To make green seasoning, blitz together onions, garlic, ginger, chillies, thyme, coriander, parsley, salt, olive oil and lime juice. Set aside.
  2. Place goat in a large bowl. Add Worcestershire sauce, tomato paste, 1 tablespoon of brown sugar and add green seasoning. Gently mix together to evenly coat the meat. Marinate in fridge for 2 hours.
  3. Heat fry pan. Add 1 tablespoon of brown sugar and melt over gentle heat.
  4. Add marinated goat to pan and simmer for 2 hours, covered.
  5. Serve with sliced spring onion, fresh coriander and steamed rice.
