Caribbean Curry

Ingredients

250 grams Few & Far Bone-in Goat
50ml White wine vinegar
¼ tsp ground cloves
2 tablespoons finely chopped chives
3 onions, 1 finely diced, 2 thinly sliced
2 gloves of garlic
Salt to taste
1 handful of fresh parsley
2 sprigs fresh rosemary, roughly chopped
Oil
3 tablespoons curry powder
Pinch black pepper
1 ½ cups lamb stock

Method

  1. In a large bowl mix vinegar, cloves, chives, onion, garlic and salt. Add the goat and marinate for about 20 minutes.
  2. Heat oil in pan, fry off onions until caramalised. Add curry powder and reduce heat. Add goat and lightly brown. Add black pepper, parsley, rosemary and stir.
  3. Add lamb stock, gently stir and bring to boil.
  4. Reduce heat, cover and simmer for 1.5 – 2 hours until goat is cooked and sauce is reduced.
  5. Serve with steamed rice
