Nigerian Goat Pepper Soup

Ingredients

1kg Few & Far Bone-in Goat
1 large onion, diced
2 red bullhorn peppers, sliced
2 Habanero chillies, sliced
3 cloves of garlic, sliced
Small knob of ginger, sliced roughly
Tablespoon dried prawns
Pinch of salt
1 tablespoon of water
Olive Oil
1 ½ tablespoon Nigerian pepper spice mix
Yams (or potatoes) 
Fresh basil to garnish

 

Method

  1. In blender, blitz onion, peppers, chillies, garlic, ginger, dried prawns, salt and water.
  2. Pour marinade over goat. Add oil and Nigerian pepper, gently fold together. Marinate in fridge for 2 hours.
  3. Heat fry pan and add marinated goat. Simmer on medium heat for 10 minutes to reduce moisture.
  4. Cover, reduce heat and leave for 2 hours.
  5. Add pre-cooked yams to goat mixture. Gently toss to coat.
  6. Serve with fresh basil
